The Farmhouse Deli at Hyatt Centric Victoria Harbour Hong Kong serves freshly baked desserts, cakes and light meals with brewed coffee and a wide selection of teas. The Hotel e-Shop offers Raspberry & Dark Chocolate Mousse Cake, Passion Fruit & White Chocolate Mousse Cake, Blueberry Lover Cheese Cake and more, all made with healthy fruits. Blueberries are rich in vitamins that help to enhance immunity and antioxidant-rich anthocyanins which promote eye health. SHKP Club has invited Kevin Leung, Pastry Chef of the Hotel, to share a simple recipe for Blueberry Lover Cheese Cake with our members. You can follow the steps to make it at home and enjoy this healthy delicacy with your loved ones.

Method

1. Melt the butter in a bowl, over a hot water bath. Mix the crushed wafer pieces into the melted butter until completely combined. Press the mixture down into a mould to get a flat surface. Put the mould into the refrigerator for 2 hours

2. Mix sugar with cream cheese until soft and smooth cheese mixture

3. Stir eggs and sour cream into the cheese mixture to make a cake batter, then pour the batter into the aforesaid mould

4. Bake the cake in a preheated 160°C oven with a water bath for approximately 35 minutes. Then remove from the oven

5. Garnish with some fresh blueberries on top and serve

Chef's tips

• The water bath method can smoothen the texture of the cheese cake

• When mixing eggs, do not over-stir the cake batter to avoid creating bubbles which will make the cake surface uneven

• When storing blueberries, wipe them dry to prevent moisture build up and deterioration
