SHKP Club brings its members the "8 Anti-Pandemic Nutrients" delicacies from SHKP hotels to tackle the pandemic together

In this anti-pandemic period, whether you choose to dine-in, get a takeaway, have food delivery service, or stay at home to cook, wholesome foods are believed to be your first choice. SHKP Club has partnered with four of Sun Hung Kai Properties' (SHKP) hotels, arranging their chefs to have dish demonstration and introduce different cooking techniques. You will be able to learn more about the nutritious foods and recipes for the "8 Anti-Pandemic Nutrients" delicacies. A range of member dining offers are available at these hotels too. We have also invited Leslie Chan, Registered Dietitian (UK) to provide information on these eight immunity-enhancing nutrients together with various dietary advice. We hope that this encourages everyone to maintain a healthy body, and build healthy lifestyles and harmonious familial bonds in the spirit of "Loving Home in Harmony". "8 Anti-Pandemic Nutrients": Vitamin A + Carotene + Lycopene

Leslie's tips for eating well

Nutritional compositions

  • Papaya is an orange-red fruit, which is a rich source of carotene and lycopene. Carotene can be converted into vitamin A in the body, and like lycopene, it can strengthen immunity.

  • Absorbing vitamin A, a fat-soluble nutrient in the form of carotene, from vegetables (e.g. papaya) helps reduce an excessive fat intake.

  • The fats found in almonds are predominantly polyunsaturated fats, and moderate supplementation can lower blood cholesterol.

The secret to a healthy diet

  • Ripe papaya’s natural sugars can be used for seasoning. Its dietary fibre helps control blood sugar levels.

  • Eating raw papaya may cause an itchy throat due to its high protease content. Cooking papaya can break this enzyme down and avoid discomfort when eating.

Cooking techniques

  • Do not cook a ripe papaya for a long time.

  • The ideal proportion for almond milk is - apricot kernels: water = 1:2

Food facts

  • Hawaiian papayas have a sweet flavour, and a yellow coloured skin indicates that the flesh is ripe. You should consume it within 1 to 2 days of purchase. Papaya gets a sweeter taste when its middle part is large.

  • Soft-fleshed fruits (e.g. mangoes) should usually be stir-fried, and can be cooked down into a sauce; Harder-fleshed fruits (e.g. lychees) can hold up to heat for a longer time.

Nutritional compositions

  • Beef is rich in iron and zinc. Both are important nutrients for the immune system.

  • The haem iron in beef is more easily absorbed by the body than iron found in plant-based ingredients. When combined with an adequate quantity of vitamins, zinc can alleviate respiratory infectious symptoms such as sneezing and nasal congestion.

  • Tomatoes contain lycopene and natural carotene, which enhances your immune system.

The secret to a healthy diet

  • Serving the dish with whole grain rice can achieve a better nutritional balance.

  • Lycopene is mainly stored at the skin of tomatoes. Be reminded to keep the tomato’s skin when cooking for an effective absorption for lycopene.

  • Use garlic for cooking whenever possible as it is bactericidal and advantageous to immunity.

Dish highlight

  • Soft beef brisket with rich tomatoes having perfect sweet and sour flavours.

Cooking techniques

  • After stewing the beef brisket for around 40 minutes, add the seasonings and continue to cook for a further 30 minutes, to ensure that the meat is tender.

  • Freshly blended tomato sauce makes the dish more aromatic, while sliced tomatoes enrich the texture.

  • Stir-frying the diced shallots and garlic quickly makes them more fragrant.

Food facts

  • High quality tomatoes are plump and ruddy coloured.

  • Fresh beef is also ruddy coloured. Recommend using beef brisket that has half fat and half lean meat.

  • Adding Thai basil, citronella, lemongrass and chili to the recipe for more Vietnamese flavours.

Nutritional compositions

  • Lion's Mane mushrooms contain oligosaccharides, which helps improve intestinal immunity. Oligosaccharides do not lose their nutritional values when being heated during cooking.

  • Bell peppers are rich in vitamin C that enhances immunity and reduces symptoms of respiratory discomfort.

The secret to a healthy diet

  • Using kitchen paper to absorb excess oils from fried foods can make them lighter and healthier.

  • Adding other fruits (e.g. kiwifruit) helps increase your intake of vitamin C and dietary fibre.

Dish highlight

  • Lion's Mane mushrooms are tender with an appetising sweet and sour sauce. This dish is suitable for both meat eaters and vegetarians.

Cooking techniques

  • Lightly frying pineapple brings out its sweetness. Avoiding using ripe pineapple as the fruit will become too soft during cooking and the overall texture of the dish will be affected.

  • Coating foods in a thin layer of batter for deep frying provides a crispier texture.

  • When Lion's Mane mushrooms are served with Chinese yam, wolfberries, figs and dried fish maw for soup, the freshness of mushrooms can be brought out.

Food facts

  • Premium Lion's Mane mushrooms are golden yellow and springy in texture. Having holes on the surface means they may be infested with insects.

  • Pears, dragon fruits and strawberries are also suitable for this dish.

  • Sweet and sour sauce is also a good pairing for shrimp balls or chicken.

Nutritional compositions

  • Vitamin D in salmon is an important element in maintaining the immune system.

  • Poaching salmon helps preserve the Omega-3 unsaturated fats which promote cardiovascular health

  • Miso is rich in glutamate, providing energy for intestinal cells and boosting immunity.

  • Soba noodles have twice as much fibre as plain noodles, which stimulates probiotic growths in the gut and improves intestinal health.

The secret to a healthy diet

  • The human body can make vitamin D when exposed to the right amount of sunlight. You can also eat more fatty fish (e.g. mackerel, sardines) or have more fortified foods, such as breakfast cereals, milk, plant-based spreads and orange juice, added with vitamin D, to absorb more nutrients.

  • Adding kombu, marmoreal mushrooms or shredded wood ear fungus as side dishes can increase your fibre intake. This helps balance your protein intake between meat and vegetables.

  • The dish gets a delicate and umami flavour, and is easy to prepare and suitable for all-ages.

Cooking techniques

  • Always cooking fresh salmon on a low heat to preserve its smooth texture.

  • Remember to adjust cooking times according to the size of the fish fillet.

  • Seasoning the noodle water with salt when cooking helps cook the noodles more evenly and makes them tastier.

Food facts

  • Fresh salmon fillets are orange-red in colour, with an oily and glossy appearance. Suggest buying Norwegian salmon at Japanese shops selling sashimi and sushi.

  • White miso tastes sweeter since it is fermented by poaching, and has a lower salt content than red miso.

  • Either fresh, soft tofu or packaged tofu can be used as both are convenient and fast choices.
