Dazzle your home party with a sprinkle of German style

Schweinshaxe (German Pork Knuckle)


German pork knuckle One (approx. 500g)
Bay leaves 5 pcs
White pepper 10g
White vinegar 20ml
Ginger (sliced) 10g
Granulated sugar 20g
Cracked black pepper 10g
Thyme 15g
Chinese red vinegar 20ml
Recommended sides: sour cabbage, broccoli, cherry tomato, potato salad, baked potato wedge, tomato sauce


Schweinshaxe (German Pork Knuckle)


  1. Wash the salted pork knuckle with water. If necessary, use a kitchen blowtorch to char away any hairs on the skin.

  2. Put the knuckle in a pot of boiling water and cook for around 5 minutes. Then, remove from the stove and rinse with water.

  3. Put the bay leaf, white pepper, white vinegar, ginger and water into a pot and boil on the stove. Once it is boiled, add the knuckle into the pot and simmer for about 1 hour and 30 minutes.

  4. Dry the knuckle with kitchen paper and poke a few holes in the skin with a meat tenderizer or fork. Wipe away any oil or water that seeps from the skin afterwards.

  5. Evenly coat the surface of the knuckle with red vinegar, sugar, black pepper and thyme. Hang and air dry for about 1 hour.

  6. Place the knuckle in a preheated oven at 200 degrees Celsius and roast for 30 minutes.

  7. To get the most out of this dish, you can pair it with a variety of side dishes based on your preferences.

Transport: The entrance to the buffet will be open daily after 6 pm. You can get to the Harvest Restaurant via any of the following routes

  • Take the NR332 bus from Kwai Fong Metroplaza (outside the mall's entrance) or the NR330 bus from MTR Tsing Yi Station (Bus Terminus). Disembark at Beach Commercial Complex and continue to Noah's Ark Hotel and Resort via Ma Wan Tung Wan Beach.

  • Take the NR331 bus from MTR Tsuen Wan Station (outside the multi-storey car park) or the NR331S bus from MTR Tsuen Wan West Station (from the parking bay outside the bus terminal along Tai Ho Road). Disembark at Ma Wan Fire Station and continue down Pak Yan Road to get to Noah's Ark Hotel and Resort.
