Here a Royal Park Hotel chef explains how to make healthy diet muffins, fruity muesli and an autumn vitality drink, giving parents a great chance to enjoy and learn cooking with their children.

Stir in the muffin ingredients little by little to make the batter well-mixed and smooth

Refrigerate the cereal and oatmeal in milk for three hours to make the muesli taste smoother

For the vitality drink, you can replace the ice and water with honey and skimmed milk to cater for your children’s preference
Healthy muffins (a total of nine)
Ingredients (serves three) | |
Cream | 216g |
Sugar | 108g |
Breadcrumbs | 90g |
Flour | 90g |
Soft butter | 54g |
Egg | 45g |
Oatmeal | 36g |
Baking powder | 9g |
Muffin preparation:

Preheat oven to 170°c

Blend soft butter and sugar, then add egg to the batter and stir thoroughly over three times

Add the breadcrumbs, flour and baking powder to the batter and stir until blended

Stir in the cream little by little then add the oatmeal and mix evenly

Fill baking cups 70% with batter

Sprinkle cereal on top for decoration.

Bake for 25 minutes.
Fruity muesli (three cups)

Milk | 100g |
Plain yogurt | 50g |
Assorted Cereal | 25g |
Oatmeal | 25g |
Raisins | 20g |
Sugar | 5g |
Apple | 1 |
Fruity muesli preparation:

Mix milk and sugar thoroughly

Add cereal and oatmeal to the milk and refrigerate for three hours

Peel and slice apple

Add apple, yogurt and raisins to the chilled oatmeal mix
Autumn vitality drink
Ingredients (for one) | |
Blueberry yogurt | 100g |
Dragon Fruit | 1/2 |
Water | 150ml |
Ice | A little |
Blueberries | A few |
Mint leaves | A few |
Autumn vitality drink preparation:

Peel and dice dragon fruit then put in blender

Add yogurt, ice and water and blend for blueberry yogurt drink

Pour into a glass and decorate with blueberries and mint
