Delightfully cute cupcakes add the ideal touch to your Christmas party

The dining table at a Christmas party is usually laden with a variety of delicacies, but one thing that grabs children's attention is eye-catching cupcakes. This issue has The Ritz-Carlton, Hong Kong pastry & bakery sous chef Hugo Li explaining an easy way to create Santa Claus and snowman cupcakes that are playfully creative, so that you and your little ones can revel in the warmth of a festive Christmas wonderland.

Tips from the chef

  • Begin making cartoon characters by rolling the fondant into a ball and use the warmth from your palms to smoothen surface wrinkles.

  • Consider getting fondant-shaping tools if you want to take your cartoon skills to the next level.

  • Sprinkling cold water on the fondant helps different layers adhere better.

Santa Claus cupcake
Ingredients (one cake)
Fondant  
  White 30g
  Red 30g
  Pink 100g
  Black a little bit
Corn flour a little bit
Cupcake one

Preparation

  1. If it's a domed cupcake, slice off the top.

  2. Set aside a little bit of pink fondant for the ear and roll the rest into a ball in your hand. Then place it gently on top of the cupcake to form Santa's face.

  3. Roll some white fondant in your hand and place it on the counter. Sprinkle some corn flour over it and use a rolling pin to make a patty the same diameter as the cupcake. Cut the fondant into a crescent about one-fifth the size of Santa's face and put this at the bottom to make a beard.

  4. Hand roll some white fondant into a cylinder then cut it in two. Then make each half a cone with a slight twist for a handlebar moustache. Place this above the beard.

  5. Shape some red fondant into a triangular nose and poke it with a skewer to make nostrils. Paste the nose above the moustache.

  6. Roll some black fondant into two small balls.

  7. Make two depressions in Santa's face for eyes and position the small black balls.

  8. Roll some white fondant into a cylinder then cut it in two and shape into eyebrows. Place these above the eyes.

  9. Roll the remaining red fondant into a ball and put it on the counter. Sprinkle with corn flour and use a rolling pin to make a patty the same diameter as the cupcake. Cut this into a crescent about one quarter the size of Santa's face and put it on top of the head as a hat.

  10. Roll some white fondant into a cylinder and put it at the bottom of the hat to make a brim. Cut away any excess.

  11. Roll some red fondant into a ball with a cone on one side and press this gently on the hat to form a peak, with the pointy end closest to the brim.

  12. Roll some white fondant into a ball and put this on the cone of the hat as decoration.

  13. Roll the remaining pink fondant into a ball and put this below the hat and then use a skewer to shape into an ear. There. You're done.

  Orange a little bit

Preparation

  2. Roll some white fondant into a ball in your hand and gently press this on the cupcake for the snowman's face.

  3. Roll some green fondant into a ball and place on the counter. Sprinkle with corn flour and use a rolling pin to make a patty the same diameter as the cupcake. Cut this into a crescent about one-third the size of the snowman's face. Put this on top of the snowman's head as a hat.

  4. Roll some green fondant into a cylinder and use an embossing tool to make the hat's crease; then put this at the bottom to form a brim. Cut away any excess.

  5. Roll some green fondant into a ball with a cone at one end; then gently press it on the hat as a peak with the pointy end closest to the brim.

  6. Roll some green fondant into a cylinder then coil into a flower. Put this on the top of the hat as a decoration.

  7. Roll some black fondant into two small balls.

  8. Make depressions in the face of the snowman for eyes and put in the small black balls.

  9. Roll some orange fondant into a cone then carve three lines on the surface to make it look like a carrot. Put this on the face for a nose.

  10. Carve a smile on the snowman's face and use a little pink fondant rolled into two little circles for each side of the smile to make rosy cheeks.
