Desserts and drinks add the perfect finishing touches to a feast and deserve to be slowly savoured. For the approaching festive season, the Royal View Hotel has tips on how to prepare three Christmas dishes to create a special festive ambience at home.
Strawberry Yogurt with Balsamic Vinegar |

Ingredients (serves four) |

Strawberries | 15 pcs |
Balsamic vinegar | 40 ml |
Sugar | 20 g |
Plain yogurt | 100 g |
Sweet cream | 250 g |
Ice cubes | As appropriate |
Instructions

Pour the balsamic vinegar into a saucepan and add sugar. Cook over low heat until the mixture thickens into a sweet and sour sauce.

Add half the strawberries into the saucepan and cook for another minute.

Remove from heat, add the remaining strawberries and mix thoroughly before putting all the contents into an ice bath to cool.

Whip the sweet cream and add yogurt. Mix thoroughly and put into a piping bag. Squeeze the mixture into a cocktail glass to form the first layer.

Add cooled strawberries to form a second layer.

Make a third layer of cream and yogurt, a fourth layer of strawberries and a fifth layer of cream and yogurt.

Garnish with fresh fruit and sprinkle sugar frosting on top to create a snowfall effect according to personal liking.

Chill the completed dessert for 30 minutes before serving.
Orange and Cranberry Mocktail |

Cranberry juice | One carton |
Orange juice | One carton |
Ice cubes | As required |
Fresh pineapple | A couple of slices (only decorative) |
Instructions

Fill a glass one third with ice.

Add cranberry and orange juice in equal portions.

Decorate with a slice of fresh pineapple on the rim of the glass.
