The creative cuisine at The Farmhouse, Hotel VIC on the Harbour keeps on coming

Located on the North Point waterfront, the newly opened HOTEL VIC features The Farmhouse, which draws design inspiration from authentic farm cottage . Greeted by décor using walnut timber and a vibrant mix of aubergine purple and olive green, guests will be mesmerized by the authentically-inspired character of the dining room. The Farmhouse has a 4-metre-high ceilings and features an immense glass curtain wall, offering diners enchanting floor-to-ceiling views of Victoria Harbour whether seated indoors or out. We are glad to have Daniel Chan, Executive Chef from HOTEL VIC, to demonstrate the Green Tea Burger with American Kurobuta Pork and Jalapenos!

American Kurobuta Pork with Green Tea Burger and Jalapeno
Ingredients (serves one)
4.5 inch green tea burger One
American Kurobuta pork 240g (2 chops)
Red onion 50g
Tomato 50g (approximately 1/2)
Italian bacon 30g (2 rashers)
Butterhead lettuce 30g
Cheddar cheese 40g (2 pieces)
Jalapeno To taste
Butter To taste
Sea salt To taste
Black pepper To taste
 
Spicy mustard mayo
Mayonnaise 50g
Mustard seed sauce 1 teaspoon
 
Recommended sides: salad, French fries

American Kurobuta Pork with Green Tea Burger and Jalapeno

Preparation:

  1. Season the surface of the pork chops with pepper and sea salt, and put them in a preheated oven at 180°C to roast, for about 25 minutes until the pork is fully cooked. Set aside.

  2. Fry the bacon in a pan until golden and crisp. Set aside.

  3. Cut the burger open and lightly toast the open side in a pan. Once toasted, spread with butter and set aside.

  4. Wash the red onion, tomato and jalapeno and then slice.

  5. Wash the butterhead lettuce and cut into long strips.

  6. Mix the mustard seed sauce into the mayonnaise to create the spicy mustard mayo.

  7. In the following order, place the ingredients on the base of the burger bun: the first pork chop, a dollop of spicy mustard mayo, butterhead lettuce, tomato, the second pork chop, another dollop of spicy mustard mayo, jalapeno, red onion and two slices of cheese.

  8. Use a kitchen blowtorch to flame the cheese until slightly melted and slightly browned. Season with a small amount of black pepper, top with two pieces of bacon and then add the top burger bun. It is done now.

  9. Depending on your preference, you can enjoy it together with salad or French fries.
